Beef Ho Fun (Beef Chow Fun)

For the Beef

  • 400-500g skirt/flank beef steak, trimmed
  • 1 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp cornstarch
  • 1 tsp bicarb soda
  • 1 tsp sugar
  • 1 tbsp high-smoke-point oil

For the Stir Fry

  • 2 tbsp high-smoke-point oil
  • 200g beansprouts
  • 1 bunch spring onions, roughly chopped
  • 3 cloves garlic, chopped
  • Optional: 1 bunch tender-stem broccoli (broccolini)
  • 400-500g flat rice noodles

For the Sauce

  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • Juice of 1 lemon

Directions

  • Cut the beef into thin slices.
  • Coat the beef slices in the beef marinade ingredients and set aside 10 minutes (ideally 30 if you have time).
  • Cut all your other ingredients to size.
  • If using dried rice noodles, cook them per packet instructions and rinse once cooked.
  • In a wok or large fry pan on high heat, fry the beef with a little oil, then set aside once browned.
  • Add the rest of the stir fry ingredients (except noodles) and cook 2 minutes.
  • Add the noodles.
  • Mix all the sauce ingredients in a bowl, pour into the stir fry, and toss until the noodles take on a brown color.
  • Add the beef back in and cook 2 more minutes.
  • Serve hot and fresh.
