
For the Pancakes
- 4⅔ cups flour
- 2 Tbsp baking powder
- 2 tsp salt
- ¾ stick butter, melted and cooled
- 2 cups milk, room temperature
- 4 eggs, room temperature
- 10 slices of ham
- 10 cubes of Swiss cheese
For the White Sauce
- 1¾ cups milk
- 1–2 bay leaves
- ¼ stick butter
- ¼ cup flour
- Salt & pepper
- Freshly grated nutmeg
For Assembly
- Stuffed pancakes
- White sauce
- 1½ cups shredded cheese
Directions
- Mix together the pancake batter ingredients, then let the batter rest for 30 minutes.
- Pour some batter onto a heated frying pan. Once it begins to firm, add a slice of ham and a cube of cheese, cover with more batter, then flip and fry until golden-brown on both sides. Repeat with the remaining batter.
- For the white sauce, melt the butter in a pan and make a roux with the flour. Whisk in the milk and seasonings and let it thicken. Remove from the heat and discard the bay leaves once thick and creamy.
- Stack the pancakes in a loaf pan, pour the white sauce over them, and sprinkle with shredded cheese. Bake at 350°F for 20 minutes.
