
Ingredients
- 1 prime rib roast
- Coarse salt
- Coarse black pepper
- Wood pellets or wood chips, for smoking
Directions
- Prep the roast: trim off the large fat cap, then tie it with butcher twine to hold its shape.
- Season generously all over with coarse salt and coarse pepper for a good crust.
- Line the bottom of a large pot with aluminum foil (so the wood does not burn through). Add a layer of wood pellets, then set the prime rib on a rack above the wood.
- Place the pot over a heat source (a small portable gas burner works great). Leave it uncovered at first so the wood ignites; once it starts to smoke, cover the whole pot.
- Smoke for about 2 1/2 hours, until cooked to your liking.
- Rest, then slice with a large knife and serve.
