
Ingredients
- About 10 saba bananas (or ripe bananas/plantains), each halved lengthwise then cut into 4 (makes about 20 pieces)
- Ube halaya (ube jam), about 1/2 cup, plus more for drizzling
- About 1/4 cup condensed milk, to taste, plus more for drizzling
- Quick-melt cheese, cut into strips
- About 20 spring roll (lumpia) wrappers
- Flour mixed with a little water into a paste, to seal
- Oil, for deep-frying
Directions
- Mix the ube halaya with the condensed milk until smooth; adjust the sweetness to taste and let cool.
- On a spring roll wrapper, spread a spoonful of the ube mixture, then add a piece of banana and a strip of cheese.
- Roll up tightly, sealing the edge with the flour-and-water paste. Repeat to make about 20 rolls.
- Heat the oil and deep-fry the rolls until golden and crisp.
- Drain, then drizzle with extra ube (or an ube-condensed milk mixture) before serving.
