Chicken

  • Chicken thighs
  • Salt and pepper
  • Onion powder
  • Paprika
  • Oil, for searing

Creamy Sun-Dried Tomato Filling

  • Onion, diced
  • Potatoes, diced
  • White wine, to deglaze
  • Butter
  • Flour
  • Chicken broth
  • Sun-dried tomatoes, diced
  • Heavy whipping cream
  • Thyme
  • Garlic
  • Paprika
  • Oregano
  • Salt and pepper
  • Fresh spinach, chopped

Topping

  • Cheddar bay biscuit dough (such as a Red Lobster-style biscuit mix)

Directions

  • Season the chicken thighs with salt, pepper, onion powder, paprika and a little oil. Sear on both sides until golden brown, then set aside and cut into pieces.
  • In the same pan, saute the onion and diced potatoes. Deglaze with white wine and let it reduce.
  • Add butter and flour to form a roux, then stir in the chicken broth, the cut-up chicken and the diced sun-dried tomatoes.
  • Stir to combine and add a good amount of heavy whipping cream. Cook a few minutes, then season with thyme, garlic, salt, pepper, paprika and oregano.
  • Fold in the chopped fresh spinach.
  • Transfer to a baking dish and top with the cheddar bay biscuit dough. Bake until golden brown and the biscuit topping is cooked through.
