
Ingredients
- Boneless, skinless chicken thighs, cut into small pieces
- Brown sugar
- Pineapple juice
- Soy sauce
- White vinegar
- Garlic
- Kosher salt
- Black pepper
- Red food coloring (optional)
- Oil, for cooking
Directions
- Make the marinade: combine the brown sugar, pineapple juice, soy sauce, white vinegar, garlic, kosher salt, black pepper, and red food coloring (optional) and mix well.
- Trim excess fat from the chicken thighs if you like, and cut into small pieces. Add to the marinade.
- Transfer to a clean container and marinate for at least 3 days – it sounds long, but trust the process.
- To cook, heat a little oil in a pan and cook the tocino over low heat so the sugar caramelizes without burning, until glazed and cooked through.
- Serve, traditionally with garlic rice, a fried egg, and Filipino-style vinegar for dipping.
