
Ingredients
- Boneless pork belly, cut into 1-inch cubes
- Avocado oil
- Salt and coarse black pepper (season generously)
Honey Jalapeno Sauce
- Honey
- Ketchup
- Jalapenos, finely chopped (smoke them alongside the pork if you like)
- Garlic powder
- Salt and pepper
Directions
- Cut the pork belly into 1-inch cubes and toss with avocado oil, salt and plenty of black pepper.
- Smoke on a rack at about 225F until rendered and bark has formed (smoke a few jalapenos alongside if using).
- Stir together honey, ketchup, chopped jalapenos, garlic powder, salt and pepper to make the sauce.
- Pull the pork belly, add to a pan and pour the sauce over; toss to coat.
- Return to the smoker briefly to set the glaze, then serve.
