
Ingredients
- 2-3 large eggs
- Warm chicken broth or stock (1:1.5 ratio of eggs to broth)
- 1 tsp light soy sauce
- 1 tsp sesame oil
- Chopped green onions
Directions
- Crack the eggs into a bowl set on a scale.
- Add WARM chicken broth or stock at a ratio of 1:1.5 (eggs to liquid). Mix well.
- Strain the mixture for a smoother texture and remove any surface bubbles with a spoon or a kitchen towel.
- Pour into a heatproof dish. Steam for 8-10 minutes over medium heat.
- Turn off the heat and leave the dish in the steamer for 5 more minutes. Make sure the eggs are cooked through.
- Drizzle with sesame oil and light soy sauce, and garnish with chopped green onions.
