
Hummus
- Garbanzo beans (chickpeas), rinsed
- Salt, to taste
- Lemon, 2 tbsp
- Garlic, 2 cloves
- Tahini, 1/3 cup
- 1-2 ice cubes
- Cold water, optional (add if too thick)
Pine Nuts
- 1 tbsp neutral oil
- A handful of pine nuts
Meat Topping
- Top sirloin, 6 oz, cut into cubes
- 1 tbsp avocado oil
- Salt, pepper, and smoked paprika, to taste
- Pomegranate molasses, to drizzle
- Olive oil, to drizzle
Directions
- Hummus: blitz the garbanzo beans, salt, lemon, garlic, tahini, and ice cubes in a food processor or blender until thick and creamy, adding cold water if too thick. Taste and adjust salt and lemon.
- Pine nuts: add 1 tbsp neutral oil to a pan over medium heat and cook the pine nuts for 4-5 minutes, or until golden brown, stirring constantly so they don't burn.
- Meat: sear the cubed top sirloin on high heat with 1 tbsp avocado oil for 5-6 minutes; season with salt, pepper, and smoked paprika. Add a handful of pine nuts for the last 2 minutes of cooking.
- Top the hummus with the seared meat and pine nuts, drizzle with pomegranate molasses and olive oil, and enjoy.
