
Ingredients
- 1 cup plain yoghurt
- 1 1/2 cups self-raising flour
- 3 cooked potatoes, mashed
- 1 cup shredded cheese
- 1 teaspoon Italian seasoning
- Melted butter, for brushing
- Fresh parsley, for garnishing
Directions
- Make the dough: in a bowl combine the yoghurt and flour. Form into a ball and knead until soft (this won't take long).
- Make the filling: combine the mashed potatoes with the cheese and Italian seasoning.
- Divide the dough into 2 parts. Roll each out into a 1 cm thick circle.
- Add half the filling to the middle, gather the edges of the dough around the filling and pinch to seal. Flip and gently roll out to a disk.
- Pan-fry on both sides until golden over medium-high heat (or bake 10 minutes at 180C / 350F).
- Brush with melted butter and garnish with fresh parsley. Serve right away.
