
Dressing
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon sherry vinegar
- 1 tablespoon whole-grain mustard
- 2 teaspoons lemon juice
- salt & pepper
- 1/4 small red onion, very thinly sliced
Whipped Goat Cheese
- 4 ounces soft goat cheese
- 6 tablespoons heavy cream
- 1/2 teaspoon fresh lemon zest
Salad
- 3 small heirloom tomatoes, cut into 1" wedges
- 2 medium peaches, cut into 1/2" wedges
- a few tears of watercress
Directions
- Whisk the first 5 dressing ingredients together, then stir in the onions and set aside.
- In a food processor, blend the whipped goat cheese ingredients until slightly fluffy, about a minute.
- Add the tomatoes, peaches, watercress and dressing to a bowl and stir until combined.
- Spread the whipped goat cheese on a platter, top with the salad, and sprinkle with salt and pepper. Serve alone or with grilled or toasted bread topped with olive oil and sea salt.
