
Ingredients
- Cherry or grape tomatoes (mixed colors), enough to fill a baking dish
- Lots of fresh herbs — thyme, basil, oregano and marjoram (use whole sprigs)
- 1 head garlic, halved crosswise
- 1 to 2 cups olive oil (enough to cover)
- Salt and freshly ground black pepper
- Burrata
- Crusty bread, cut into thick slabs and toasted
Directions
- Fit the tomatoes into a baking dish along with lots of fresh herbs (don't be afraid to use the entire sprig) — thyme, basil, oregano and marjoram.
- Cut a head of garlic in half and add it to the dish. Nestle everything in nice and compact.
- Cover with olive oil, between 1 and 2 cups. Sprinkle with salt and pepper.
- Roast in a 400F oven for 1 hour, until the tomatoes are soft and jammy and the garlic is caramelized.
- Serve the roasted tomato confit alongside creamy burrata and slabs of toasted bread to schmear it all on.
