
Ingredients
- 1 cup self-rising flour (or make your own: 1 cup all-purpose flour + 1.5 tsp baking powder + 1/4 tsp kosher salt, whisked together)
- 1 cup cottage cheese (blend first for a smoother dough, optional)
- Avocado oil spray
- Mini chocolate chips
Icing
- 1 cup confectioners sugar
- About 3 tsp vanilla milk or regular milk
Directions
- In a large bowl, mix the flour with the cottage cheese with a spoon. Once it starts to come together, add the chocolate chips, then knead with your hands. (If it becomes too wet, add more flour 1 tbsp at a time.)
- Move the dough to a lightly floured surface and knead until it comes together. Form a ball.
- Use a knife to slice the dough into 16 equal parts.
- Roll each section into a ball.
- Preheat the air fryer and coat the basket with avocado oil spray.
- Place 8 balls in the air fryer at a time, spaced out, and spray with avocado oil. (The rest can sit in the fridge while you wait.) Cook for 9-10 min at 350F.
- Remove from the air fryer and let cool on a drying rack. Repeat with the remaining 8.
- Whisk the confectioners sugar and milk in a bowl. Add more sugar if too liquidy, or more milk if too thick.
- Once the donuts are cool, dip into the glaze. Let rest on a drying rack for about 15 min (place parchment underneath for drips). Enjoy.
