
Ingredients
- 1 cup whole milk plain yogurt
- 1/3 cup maple syrup
- 1/4 cup unsalted butter, melted and slightly cooled
- 2 eggs, lightly beaten
- 2 teaspoons pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup blueberries (fresh or frozen)
- 1 tablespoon fresh lemon zest
- 2 tablespoons fresh lemon juice
Directions
- Preheat oven to 375F. Coat an 8×8-inch metal baking pan with nonstick spray (optional: line with parchment for easy removal).
- In a large bowl, stir together the yogurt, maple syrup, eggs, butter and vanilla.
- Add the flour, baking powder, baking soda and salt to the wet mixture.
- Gently stir the wet and dry ingredients together, then stir in the lemon juice and zest.
- Pour the batter into the prepared pan and sprinkle the berries on top.
- Bake 26-28 minutes, until the edges are lightly golden and a cake tester inserted in the center comes out cleanly.
