Invisible Apple Cake

Ingredients

  • 3 eggs, beaten
  • 2/3 cup milk (room temperature)
  • 4 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 2/3 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 apples (about 2 pounds), peeled, cored, and thinly sliced

Directions

  • Preheat the oven to 350F (175C) and line a loaf pan with parchment paper.
  • In a bowl, mix the beaten eggs, milk, melted butter, and vanilla extract.
  • In a separate bowl, whisk together the flour, powdered sugar, cinnamon, baking powder, and salt.
  • Combine the dry mixture into the wet mixture, stirring until smooth.
  • Gently fold in the thinly sliced apples until every slice is coated with batter (the batter is thin, so it "disappears" into the apples).
  • Pour into the prepared loaf pan and spread evenly.
  • Bake for 40-50 minutes, until golden and a toothpick comes out clean.
  • Let the cake cool before serving. Optionally, dust with powdered sugar.
