
For the Bars
- 1/2 cup butter, room temperature
- 1 cup granulated sugar
- 1 whole egg plus 2 egg yolks (reserve the whites for the topping)
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
For the Brown Sugar Meringue Topping
- 2 egg whites
- 1 cup light brown sugar, packed
Directions
- Preheat the oven to 350F and line a 9×13 pan.
- Cream the butter and granulated sugar until smooth. Beat in the whole egg, 2 egg yolks, and vanilla.
- Mix in the flour, baking powder, and salt. Press the dough evenly into the pan.
- Scatter the chocolate chips and mini marshmallows over the dough.
- Beat the egg whites to stiff peaks, then fold in the brown sugar. Spread the meringue over the top.
- Bake about 30 minutes, until the meringue is golden brown. Cool before cutting into bars.
