
Ingredients
- 1 chicken thigh
- 1 cup corn flakes, crushed
- 1 cup flour
- 2 eggs, beaten
- Ciabatta bread, for serving
Honey Butter Sauce
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 tbsp brown sugar (or brown sugar replacement)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1/4 cup water
Cucumber Salad
- 1 whole cucumber, sliced
- 1/4 cabbage, sliced
- 1 tbsp avocado oil
- 1/2 lemon, squeezed
- 1 tbsp sugar (or sugar replacement)
- 1 tbsp garlic powder
- 1 tbsp honey
- 1/2 tbsp salt
Directions
- Dredge the chicken thigh in flour, then the beaten eggs, then the crushed corn flakes. Press the corn flakes on firmly.
- Preheat your air fryer to 385F. Add the breaded thigh, give it a light spray of oil, and cook 16 minutes, or until it reaches an internal temperature of 165F.
- Honey butter sauce: in a pan, add the sesame oil and minced garlic and cook until fragrant. Add the remaining sauce ingredients, reduce the heat, and cook until the sauce has thickened.
- Cucumber salad: add all the ingredients to a container, close the lid, and shake well.
- Assemble on toasted ciabatta bread and enjoy.
