Ingredients
- 4 beef short ribs (about 4 lbs)
- 1 kiwi, peeled
- 1 small pear
- 1/4 purple onion (or sub shallots or white onion)
- 4 slices ginger, peeled
- 5 garlic cloves
- 1/2 cup water
- 1/2 cup Korean BBQ sauce (or sub 1 tbsp honey + 2 tbsp soy sauce + 2 tsp salt + 1/4 cup water)
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1/2 tbsp salt
Directions
- (Optional) Wash the short ribs and soak them in water to remove impurities from the bone for a cleaner-tasting beef.
- Chop the kiwi (skin peeled), onion, and pear. Slice the ginger.
- Place the garlic, kiwi, onion, pear, ginger, and water in a blender and blend until smooth.
- In a bowl, combine the blended marinade with the Korean BBQ sauce, oyster sauce, soy sauce, sugar, and salt. Mix together.
- Add the beef to the marinade and refrigerate overnight (about 1 day for maximum flavor). Take out an hour before cooking.
- Preheat the air fryer to 390°F. When hot, add the ribs (with some of the marinade) and cook for 20 minutes — use a thermometer, as times vary with the thickness of the bone.
- Flip the ribs and cook 5 more minutes for extra char.
- Let rest 5-10 minutes and enjoy.
Sweet and savory short ribs with a fruit-based Korean marinade, finished in the air fryer. From cook with dana on Instagram. NOTE: marinate overnight (about 1 day) for maximum flavor — much longer and the kiwi can make the meat mushy.
