
For the Beef
- 400-500g skirt/flank beef steak, trimmed
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp cornstarch
- 1 tsp bicarb soda
- 1 tsp sugar
- 1 tbsp high-smoke-point oil
For the Stir Fry
- 2 tbsp high-smoke-point oil
- 200g beansprouts
- 1 bunch spring onions, roughly chopped
- 3 cloves garlic, chopped
- Optional: 1 bunch tender-stem broccoli (broccolini)
- 400-500g flat rice noodles
For the Sauce
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- Juice of 1 lemon
Directions
- Cut the beef into thin slices.
- Coat the beef slices in the beef marinade ingredients and set aside 10 minutes (ideally 30 if you have time).
- Cut all your other ingredients to size.
- If using dried rice noodles, cook them per packet instructions and rinse once cooked.
- In a wok or large fry pan on high heat, fry the beef with a little oil, then set aside once browned.
- Add the rest of the stir fry ingredients (except noodles) and cook 2 minutes.
- Add the noodles.
- Mix all the sauce ingredients in a bowl, pour into the stir fry, and toss until the noodles take on a brown color.
- Add the beef back in and cook 2 more minutes.
- Serve hot and fresh.
