
Ingredients
- 1 lb pork shoulder
- 3 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1/2 tsp sesame oil
- 1 1/2 tbsp honey
- 2-3 cloves garlic, minced
- 2 tbsp hoisin sauce
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1/2 tsp five spice powder
- A few drops red food coloring (optional, for the classic color)
Directions
- Make the marinade: in a bowl combine the soy sauce, Shaoxing wine, sesame oil, honey, garlic, hoisin, salt, white pepper, and five spice powder. Whisk until smooth, adding the red food coloring now if you want the classic red hue.
- Marinate the pork: turn the pork shoulder in the marinade until every side is coated. Cover and let it sit at least 1 hour (overnight in the fridge gives noticeably deeper flavor).
- Heat the air fryer to 400F (200C).
- Air fry: set the pork in the basket and brush on a little of the reserved marinade. Cook 16 minutes total, flipping and brushing again at the halfway mark so both sides glaze up.
- Rest a few minutes off the heat, then slice thin. Best with a bowl of rice.
