Croque Monsieur Pancakes

For the Pancakes

  • 4⅔ cups flour
  • 2 Tbsp baking powder
  • 2 tsp salt
  • ¾ stick butter, melted and cooled
  • 2 cups milk, room temperature
  • 4 eggs, room temperature
  • 10 slices of ham
  • 10 cubes of Swiss cheese

For the White Sauce

  • 1¾ cups milk
  • 1–2 bay leaves
  • ¼ stick butter
  • ¼ cup flour
  • Salt & pepper
  • Freshly grated nutmeg

For Assembly

  • Stuffed pancakes
  • White sauce
  • 1½ cups shredded cheese

Directions

  • Mix together the pancake batter ingredients, then let the batter rest for 30 minutes.
  • Pour some batter onto a heated frying pan. Once it begins to firm, add a slice of ham and a cube of cheese, cover with more batter, then flip and fry until golden-brown on both sides. Repeat with the remaining batter.
  • For the white sauce, melt the butter in a pan and make a roux with the flour. Whisk in the milk and seasonings and let it thicken. Remove from the heat and discard the bay leaves once thick and creamy.
  • Stack the pancakes in a loaf pan, pour the white sauce over them, and sprinkle with shredded cheese. Bake at 350°F for 20 minutes.
