Filipino Chicken Tocino

Ingredients

  • Boneless, skinless chicken thighs, cut into small pieces
  • Brown sugar
  • Pineapple juice
  • Soy sauce
  • White vinegar
  • Garlic
  • Kosher salt
  • Black pepper
  • Red food coloring (optional)
  • Oil, for cooking

Directions

  • Make the marinade: combine the brown sugar, pineapple juice, soy sauce, white vinegar, garlic, kosher salt, black pepper, and red food coloring (optional) and mix well.
  • Trim excess fat from the chicken thighs if you like, and cut into small pieces. Add to the marinade.
  • Transfer to a clean container and marinate for at least 3 days – it sounds long, but trust the process.
  • To cook, heat a little oil in a pan and cook the tocino over low heat so the sugar caramelizes without burning, until glazed and cooked through.
  • Serve, traditionally with garlic rice, a fried egg, and Filipino-style vinegar for dipping.
