
Ingredients
- 6 boneless, skinless chicken thighs
- 1 packet French onion soup mix
- 3 Tbsp olive oil
- 2 onions, chopped
- 1 1/2 cups long-grain rice
- 2 cups chicken stock
- 3 Tbsp sour cream (or heavy cream or cream cheese)
- 1 large handful spinach leaves
Directions
- In a large frying pan, saute the onions with a little butter or oil and some salt until cooked through, about 7 minutes. Remove and set aside.
- Coat the chicken with the French onion soup mix. Heat 3 Tbsp oil in the same pan and sear the chicken on both sides until golden, about 2 minutes per side. Remove from the pan.
- Add the rice to the same pan and cook, stirring, for 1 minute. Add the stock, sour cream, and a little salt; bring to a simmer for 3-4 minutes.
- Return the onions, spinach, and chicken to the pan. Cover and simmer 20-25 minutes, until the rice is tender and the chicken is cooked through.
