Honey Jalapeno Pork Belly Burnt Ends

Ingredients

  • Boneless pork belly, cut into 1-inch cubes
  • Avocado oil
  • Salt and coarse black pepper (season generously)

Honey Jalapeno Sauce

  • Honey
  • Ketchup
  • Jalapenos, finely chopped (smoke them alongside the pork if you like)
  • Garlic powder
  • Salt and pepper

Directions

  • Cut the pork belly into 1-inch cubes and toss with avocado oil, salt and plenty of black pepper.
  • Smoke on a rack at about 225F until rendered and bark has formed (smoke a few jalapenos alongside if using).
  • Stir together honey, ketchup, chopped jalapenos, garlic powder, salt and pepper to make the sauce.
  • Pull the pork belly, add to a pan and pour the sauce over; toss to coat.
  • Return to the smoker briefly to set the glaze, then serve.
