
Ingredients
- Onions, sliced
- Tomatoes, chopped
- Butter
- Protein of choice (beef or chicken), cut into pieces
- 1 shot espresso
- Japanese curry cubes (curry roux), to taste
- Black pepper
- Cooked rice, to serve
- Optional: kimchi, to serve
Directions
- Add the onions, tomatoes, butter, your protein, a shot of espresso, and the curry cubes to the rice cooker. No extra water needed — the liquid cooks out of the tomatoes and onions, so it stays super flavorful.
- Set the rice cooker to multi-cook (slow cook) for 1 hour.
- Give everything a good squish/stir, add a couple more curry cubes and black pepper to taste, then cook once more on the regular white-rice setting.
- When it's done everything will have melded together and the meat will be super tender. Serve over rice (excellent with kimchi on the side).
