Weeknight Meals

Chicken

  • 1 lb skin-on bone-in chicken thighs
  • 1/4 tsp toasted sesame seeds
  • 1 tbsp green onions, finely chopped

Marinade

  • 1 tbsp regular (or light) soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp honey
  • 1/2 tbsp toasted sesame oil
  • 1 tsp dark soy sauce
  • 1 tsp Shaoxing cooking wine (or dry sherry)
  • 1 tsp ginger, finely grated
  • 1/2 tsp garlic powder
  • 1/4 tsp white pepper (or black pepper)

Directions

  • Debone: position the thigh bone-side up and make shallow cuts around the bone until it lifts out, without piercing the skin. Pat dry.
  • Marinate: place the thighs in a bowl with all the marinade ingredients and massage until evenly coated. Let sit 15 minutes.
  • Prepare the air fryer: lightly spray the basket with neutral oil or line with parchment. Let excess marinade drip off, then arrange the chicken skin-side up in a single layer with spacing.
  • Cook: air fry at 375F for 8-10 minutes without flipping, until the skin is caramelized and the thickest part reaches 165F.
  • Rest 5 minutes, then slice into strips and garnish with sesame seeds and green onions. Serve over rice.

Ingredients

  • 3/4 pound ground spicy Italian chicken sausage
  • 1 shallot, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 4 cups low sodium chicken broth
  • 2 teaspoons dijon mustard
  • 1 pound dry orzo pasta
  • 2 small zucchini, shredded
  • 2 cups fresh baby spinach
  • 1/2 cup canned coconut milk or heavy cream
  • 1 cup grated parmesan
  • Fresh basil, to serve

Directions

  • In a large skillet over medium heat, brown the chicken sausage, about 5 to 8 minutes. Add the shallot, garlic, oregano, and thyme and cook until fragrant, 3 minutes. Mix in the sun-dried tomatoes and cook another 2 minutes.
  • Pour in the broth, add the dijon, and bring to a boil. Add the orzo and zucchini and cook, stirring often, until the pasta is al dente, about 6 minutes.
  • Mix in the spinach, pour in the coconut milk (or cream), and sprinkle over the parmesan. Stir until creamy, then remove from the heat.
  • Serve topped with fresh basil.

Ingredients

  • 1 head green cabbage, cut into thick wedges
  • Neutral oil, for charring
  • Dashi (enough to braise, about 1 cup)
  • 2 scallions, sliced
  • 2 tablespoons honey
  • 2 tablespoons miso
  • 2 tablespoons soy sauce

Directions

  • Char the cabbage wedges over super-high heat until deeply browned on the cut sides.
  • Add the dashi and scallions, cover, and braise over low heat for about 30 minutes.
  • Lift the cabbage out. Add the honey, miso, and soy sauce to the pan and cook into a thick glaze.
  • Spoon the glaze over the cabbage and plate.

Ingredients

  • 1 bunch broccolini
  • Olive oil
  • Salt
  • 1 cup whole-milk ricotta
  • Optional, for the whipped ricotta: grated garlic, a drizzle of honey, a squeeze of lemon
  • Calabrian chilies, to finish

Directions

  • Blend the ricotta until smooth and whipped – on its own, or with a little grated garlic, honey and lemon for flavor.
  • Toss the broccolini with olive oil and salt, then char it in a hot pan (or under the broiler) until deeply colored.
  • Spread the whipped ricotta on a plate, pile on the charred broccolini, and spoon Calabrian chilies over the top.

Ingredients

  • 1 lb Brussels sprouts, halved
  • Neutral oil, for the pan
  • Maple syrup
  • Fish sauce
  • Chili flakes (gochugaru) and toasted sesame seeds, to garnish

Directions

  • Trim and halve the Brussels sprouts.
  • Whisk together roughly equal parts maple syrup and fish sauce to make the glaze.
  • Heat oil in a pan over high heat and lay the sprouts cut-side down. Crank up the heat to get deep color and char on them.
  • Add the maple-fish sauce glaze and let it reduce, tossing, until it coats the sprouts in a sticky glaze.
  • Garnish with chili flakes and sesame seeds. Serve right away.

Ingredients

  • 1.5-2 lbs salmon, cubed
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon honey
  • 2 tablespoons minced garlic
  • Neutral oil, as needed
  • 2 Roma tomatoes, small dice
  • 1/2 sweet onion, small dice
  • Chives, as needed

Red Chili Sauce

  • 3 red Fresno chilies (seeds removed)
  • 4 garlic cloves
  • 3 oz water
  • 1/4 cup granulated sugar
  • 1 tablespoon lime juice
  • 3 tablespoons fish sauce

Directions

  • Marinate the salmon with a light drizzle of oil, kosher salt, black pepper, paprika, garlic powder and honey.
  • Transfer to a sheet tray lined with foil or parchment and broil on high for 10 minutes.
  • Combine the chili sauce ingredients in a blender and blend together.
  • Add oil to a pan on low heat. When warm, add the minced garlic and fry on low until fragrant.
  • Add the onion and tomatoes and cook on medium heat until softened.
  • Add the chili sauce and bring to a simmer for 5 minutes, then fold in the cooked salmon.
  • Give everything a gentle mix and garnish with chives.

Ingredients

  • 1 cup plain yoghurt
  • 1 1/2 cups self-raising flour
  • 3 cooked potatoes, mashed
  • 1 cup shredded cheese
  • 1 teaspoon Italian seasoning
  • Melted butter, for brushing
  • Fresh parsley, for garnishing

Directions

  • Make the dough: in a bowl combine the yoghurt and flour. Form into a ball and knead until soft (this won't take long).
  • Make the filling: combine the mashed potatoes with the cheese and Italian seasoning.
  • Divide the dough into 2 parts. Roll each out into a 1 cm thick circle.
  • Add half the filling to the middle, gather the edges of the dough around the filling and pinch to seal. Flip and gently roll out to a disk.
  • Pan-fry on both sides until golden over medium-high heat (or bake 10 minutes at 180C / 350F).
  • Brush with melted butter and garnish with fresh parsley. Serve right away.

Ingredients

  • Kosher salt
  • 12 oz. fusilli corti bucati or other short pasta
  • 1 (12-oz.) can evaporated milk (1 1/2 cups)
  • 2 (5.3-oz.) packages Garlic & Herb Boursin

Directions

  • In a large pot of boiling salted water, cook pasta, stirring occasionally, until al dente according to package directions. Reserve ½ cup pasta water, then drain.
  • Meanwhile, in a large saucepan over medium-low heat, bring milk to a simmer. Add Boursin and cook, stirring, until melted and well combined, about 3 minutes. Return to a simmer and cook, stirring occasionally, until slightly thickened and glossy, 2 to 3 minutes more; season with ½ tsp. salt.
  • Add cooked pasta to sauce along with a splash of pasta water. Cook over medium-low heat, gently stirring and adding more pasta water as needed, until sauce coats pasta; season with salt, if needed.

Ingredients

  • 1 (13.5-oz.) can unsweetened coconut milk
  • 4 garlic cloves, grated
  • 1 (1") piece ginger, peeled, grated
  • 1/2 c. low-sodium soy sauce
  • 1/4 c. red curry paste
  • 1 lime, juiced, plus wedges for serving
  • 1 lb. dumplings, flavor of choice
  • 3 bok choy, stems removed, greens finely chopped
  • 2 scallions, thinly sliced
  • Chili crisp oil, for serving

Directions

  • Arrange a rack in center of oven; preheat to 350°. If the coconut milk is separated or looks broken, transfer to a bowl and whisk until fully homogenized, then pour into a 13" x 9" baking dish. Add garlic, ginger, soy sauce,curry paste, and lime juice and whisk until combined.
  • Arrange dumplings on top of sauce in 3 lengthwise rows. Scatter bok choy over dumplings and cover dish with foil
  • Bake dumplings until heated through and sauce is creamy and glossy, 30 to 35 minutes.
  • Top with scallions. Drizzle with chili crisp oil, and finish with more lime juice if desired.

Sauce

  • 1.5-2 tbsp peanut butter (plain or chunky)
  • 1-2 tbsp soy sauce (add more or less to taste)
  • 1 tsp dark mushroom soy sauce (optional, for colour)
  • 1 tbsp garlic chili oil or chili oil with sediment
  • 1 tbsp gochugaru (or other chili powder/flakes)
  • 1/2 to 1 tbsp rice vinegar (or Chinese black vinegar / regular vinegar)
  • 1-2 tsp sugar (optional, for sweetness)
  • 2-3 tbsp water

To Serve

  • 3.5 oz dry wheat noodles
  • Chopped spring onions/green onions
  • Chopped coriander
  • Sesame seeds
  • A drizzle of sesame oil

Directions

  • Make the sauce: mix everything in a large bowl until smooth. Adjust to taste; if using sweetened peanut butter you can skip the sugar. Prepare the sauce first so you can add the noodles right after cooking.
  • Cook the noodles according to the package instructions, or until chewy to your liking.
  • Drain the noodles and immediately add them to the sauce. Mix well to coat.
  • If the sauce is thick, add another 1-2 tbsp of the noodle water for a runnier consistency that coats easily.
  • Finish with fresh coriander, spring onions, sesame seeds and a drizzle of sesame oil. Enjoy!
