Weeknight Meals

Marinade

  • 1 large chicken breast (~8 oz), or equivalent chicken thighs/drumstick meat (skin optional)
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh cracked black pepper
  • 2 teaspoons mirin
  • Optional: 1 teaspoon garlic powder, paprika, 1 tablespoon oyster sauce, 2 teaspoons soy sauce

Batter

  • 1/2 cup water
  • 1/4 cup potato starch
  • 1/4 cup corn starch
  • 4 scallion stalks (whites and greens separated)
  • 1/4 yellow onion, thinly sliced
  • 1/2 cup corn kernels (the reel's twist: add corn!)

Dipping Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar or honey
  • 1 teaspoon sesame oil
  • 1 to 2 teaspoons water
  • 1 teaspoon sesame seeds
  • 1 small scallion, finely sliced
  • Optional: pinch of gochugaru or sliced chili
  • Optional: tiny bit minced garlic (1/4 clove)

Directions

  • Slice the chicken breast thinly against the grain (or cube thighs/drumsticks into 1 to 2 cm pieces) and marinate 15 minutes with the salt, pepper, mirin, and any optional additions.
  • Soak the scallion greens in ice water and reserve the whites.
  • Mix the potato starch, corn starch, and water until smooth, then combine with the marinated chicken, scallion whites, sliced onion, and corn kernels. For a thicker pancake use a little less water; more water gives a thinner, crispier pancake.
  • Heat 3 to 4 tablespoons oil in a nonstick skillet over medium-high heat.
  • Pour in the mixture, spread it thin, and fry 4 to 5 minutes until crisp and golden.
  • Flip and fry the other side until the chicken is cooked through and the pancake is crisp.
  • Whisk together the dipping sauce and serve alongside, topped with the scallion greens.

Ingredients

  • 2 teaspoons oil
  • ½ cup finely chopped onions
  • 1 lb. ground beef (chicken or turkey!)
  • 2-3 tablespoons taco seasoning (homemade or store-bought)
  • 5-6 large “burrito” sized flour tortillas
  • 5-6 small “street taco” sized flour tortillas
  • ⅓ cup cheese sauce (homemade or store-bought)
  • 5-6 tostada shells (or ~ 5 Doritos per wrap)
  • ½ cup sour cream
  • ~2 cups shredded lettuce
  • 1 cup chopped tomatoes
  • ⅓ cup chopped cilantro
  • 1 ¼ cups shredded cheese (such as Mexican blend)
  • Oil or cooking spray

Directions

  • GROUND BEEF: Heat the oil in a large skillet over medium-high heat. Add the onions and saute them for 4 minutes or until translucent. Add the ground beef and crumble. When the ground beef is about halfway cooked, season with taco seasoning and stir to combine. Add ½ cup of water if you used my homemade seasoning (follow packet directions if you used store-bought) and stir. Let the ground beef simmer on low heat for 7-8 minutes or until the sauce thickens and coats the ground beef and is no longer watery. Allow the ground beef to cool before attempting to make Crunchwraps (about 15 minutes.) You can also refrigerate the meat at this point and use it the following day.
  • BUILD: If this is the first time you’re making a Crunchwrap supreme, remember, less is more! Use fewer toppings on the first one until you get the hang of folding them! Place a large “burrito” sized tortilla on a clean surface. Add a scant ½ cup of ground beef, followed by a dollop of cheese sauce. Then, place a tostada on top. Spread a small dollop of sour cream over the tostada, sprinkle with roughly ⅓ cup of shredded lettuce, a few chopped tomatoes, a sprinkle of cilantro, and 2 scant tablespoons of shredded cheese. Place the small taco-sized flour tortilla over the stack. Fold the edges of the burrito-sized tortilla towards the center.
  • COOK: If you have a panini press with a grill plate use that! If not, heat a small drizzle of oil in a nonstick skillet over medium-low heat. Place the prepared Crunchwrap, seam side down, using two hands to gently lay it in the skillet, start moving your fingers back as you lay it in the pan so the pan takes over for your fingers and so the edges don’t lift. This is the hardest part so take your time here! The first one won’t turn out perfect the way first pancakes usually don’t. It does take a little bit of practice but not over stuffing the Crunchwrap is key! Cook the Crunchwrap until golden; roughly 2-3 minutes per side. Cut the Crunchwrap and serve with tons of hot sauce!

Whipped Ricotta Yogurt

  • 3.5 oz ricotta
  • 7 oz full-fat Greek yogurt
  • 1 garlic clove, minced
  • 1/2 tsp za'atar
  • 1/2 tsp sumac
  • salt, to taste
  • black pepper, to taste

Chili Butter

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • sea salt

To Serve

  • 2 eggs (or 4 if you're very hungry)
  • fresh dill
  • freshly ground black pepper
  • sesame seeds
  • za'atar
  • sumac
  • crusty bread

Directions

  • Bring a pot of water to a boil over high heat. Add the eggs and boil for 5 minutes, then drain.
  • Whisk the ricotta with the yogurt. Add za'atar, sumac and garlic; season with salt and pepper.
  • Add the unsalted butter and a little sea salt to a small non-stick skillet. Cook over medium-low heat, stirring frequently, until the butter starts to foam. Add the olive oil, chili powder and smoked paprika and cook about 1 minute more, then remove from heat.
  • To serve, spread the yogurt-ricotta mixture into the bottom of each bowl. Add the eggs, spoon the chili butter over the top, and sprinkle with sesame seeds, fresh dill and black pepper. Finish with extra za'atar, sumac and red pepper flakes. Serve with crusty bread or a golden butter-fried toast.

  • 300g chicken breast
  • 1 egg, beaten
  • A pinch of salt
  • A pinch of pepper
  • Some soft (cake) flour
  • Some vegetable oil
  • Lettuce, for serving

Nanban (Vinaigrette) Sauce

  • 2 tablespoons sugar
  • 3 tablespoons vinegar
  • 3 tablespoons soy sauce

Tartar Sauce

  • 2 boiled eggs, chopped
  • 1/4 onion, diced
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon lemon juice
  • A pinch of salt
  • A pinch of pepper

Directions

  • Pierce the chicken skin with a fork. Using the back of a knife, pound the breast to an even thickness.
  • Salt and pepper the breast, coat with soft flour and run it through the beaten egg.
  • Heat 1cm of oil in a medium skillet to 170C and add the chicken. Don't touch it until one side is golden, about 5 minutes, then flip. Remove when the other side is brown and crispy; drain the oil.
  • Wipe the skillet clean. Add the nanban sauce ingredients and bring to a boil over medium heat. Return the chicken and simmer, coating it all over.
  • Make the tartar sauce: mix all the ingredients well in a bowl.
  • Place the chicken over lettuce on a plate, top with plenty of tartar sauce and sprinkle with parsley.

Ingredients

  • 2 cups chicken broth
  • 1/2 can sweet corn
  • 1 green onion, whites and greens separated
  • 1/2 tsp white pepper
  • Cornstarch slurry (about 1 tbsp cornstarch mixed with water)
  • 2 eggs, beaten
  • Sesame oil
  • Salt

Directions

  • Make a cornstarch slurry by stirring the cornstarch into a little water.
  • In a pot, add the chicken broth, sweet corn, the whites of the green onion and the white pepper. Bring to a boil.
  • Stir in the cornstarch slurry, making sure there are no lumps.
  • Reduce the heat. While slowly stirring, pour in the beaten eggs to create silky ribbons.
  • Finish with sesame oil, salt and the green onion greens.

Ingredients

  • 1 tbsp oil
  • 1 garlic clove, minced
  • 200g/7oz chicken mince (ground chicken)
  • 1 tsp curry powder (anything mild)
  • 1 1/2 tbsp red curry paste, separated
  • 1/2 + 1/2 tsp dark soy sauce
  • 1 1/2 cups chicken stock/broth (low sodium)
  • 3/4 cup coconut milk (~1/2 a can), full fat for best flavour
  • 2 tbsp cider vinegar
  • 3 tbsp peanut butter
  • 2 instant ramen or noodle cakes (~70-100g/2.5-3.5oz per cake; any brand, discard the seasoning pack)
  • 2 (big!) handfuls baby spinach

To serve

  • finely chopped peanuts
  • coriander/cilantro
  • squirt of sriracha or other chilli paste

Directions

  • Heat the oil over high heat, cook the garlic 20 sec. Cook the chicken 2 min until it mostly changes from pink to white.
  • Add 1 tbsp red curry paste, the curry powder and 1/2 tsp soy, cook 1 min.
  • Clear a space, add the remaining 1/2 tbsp curry paste, stir for 30 sec. Add the chicken stock, simmer 1 min.
  • Squish the noodle cakes in, pushing the chicken aside so the noodles are as submerged as possible. Leave 45 sec, turn, leave 30 sec, loosen the noodles.
  • Push the noodles aside, add the coconut milk, peanut butter and vinegar, then give it a quick mix to mostly dissolve the peanut butter. Add the spinach, toss 30 sec until wilted. Keep it saucy.
  • Serve, sprinkled with coriander, peanuts and sriracha or chilli paste if desired.

Notes: sub turkey, pork or beef for the chicken. Sub light or normal soy (colour will be paler). For the curry paste, Maesri is best/cheapest but anything works (except a very sweet brand). From RecipeTin Eats on Instagram.

  • 1 lb baby bok choy, cleaned (halved lengthwise if large)

Garlic Sauce

  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/4 tsp white pepper
  • 1/2 tbsp sesame oil
  • 1/2 cup chicken stock
  • 1/2 tbsp cornstarch
  • 10 cloves garlic, minced
  • 1 tbsp oil, for frying the garlic

Directions

  • Clean the bok choy, halving any larger heads lengthwise. Bring a pot of salted water with a splash of oil to a boil and blanch the bok choy 1 to 2 minutes, until bright green. Drain and arrange on a serving plate.
  • Whisk together the oyster sauce, soy sauce, Shaoxing wine, sugar, white pepper, sesame oil, chicken stock and cornstarch until combined.
  • Heat a pan over high heat with 1 tablespoon oil. Fry the minced garlic for a few seconds until fragrant, then pour in the sauce.
  • Simmer 1 to 2 minutes until the sauce thickens slightly, then spoon it over the bok choy and serve.

  • 6 bone-in, skin-on chicken thighs (or any cut you like)
  • Tiny drizzle of olive oil (about 1/2 tablespoon)
  • Pinch of salt
  • Pinch of pepper (optional)
  • 3 heaping tablespoons sun-dried tomato pesto (or any pesto you like)

Directions

  • Place the chicken thighs in a baking dish. Season with a pinch of salt (and pepper if using) and add a tiny drizzle of olive oil.
  • Add the sun-dried tomato pesto and, with clean hands, give the chicken a good massage so it is coated all over.
  • Bake at about 400°F for 45 minutes to 1 hour, until cooked through and the skin is crisp and juicy.

Salad

  • 1/2 head green cabbage, thinly shredded
  • 1/4 head red cabbage, thinly shredded
  • 1 carrot, julienned
  • 1 cup cherry tomatoes, halved
  • Handful of fresh parsley (or cilantro), chopped

Pineapple Dressing

  • 1/4 of a small sweet onion, roughly diced
  • 1 1/4 cup pineapple, chopped
  • 1/3 cup plant-based mayo
  • 4 tbsp agave nectar
  • 6 tbsp lemon juice (approximately 1 1/2 lemons)
  • 1 1/4 tsp salt
  • 1 tsp dijon mustard

Directions

  • Blend all of the pineapple dressing ingredients until smooth.
  • Toss the shredded green and red cabbage, carrot and herbs together with the dressing until well coated.
  • Top with the halved cherry tomatoes and serve. The dressing keeps up to 7 days in the refrigerator.

Peanut Dressing

  • 3 tablespoons soy sauce

  • 1 tablespoon maple syrup

Directions

  • Add the chopped green and purple cabbage, cucumber, green onion, bell pepper, carrots, cilantro, air-fried tofu and roasted cashews to a large bowl.
  • Whisk all the dressing ingredients together until smooth.
  • Pour the dressing over the salad and toss until everything is well coated.
  • Serve right away, or store in the fridge for up to 5 days.
