
Ingredients
- 20 oz (600g) enoki mushrooms, sliced lengthwise into strips
- 4-5 cups neutral oil, for frying
Bang Bang Sauce
- 1/2 cup kewpie mayo
- 1/4 cup Thai sweet chili sauce
- 3 tbsp sriracha (adjust to your liking)
Wet Batter
- 1.5 cups all-purpose flour
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1.5 tsp black pepper
- 2 tsp salt
- 1 tsp baking powder
- 1/4 cup cornstarch
- 1.5 cups sparkling water, unflavored
Directions
- Slice the enoki mushrooms lengthwise into strips.
- Mix the bang bang sauce ingredients together and set aside until ready to use.
- Combine the wet batter ingredients in a bowl and mix until well combined.
- Drench the enoki mushrooms in the batter and tap off any excess.
- In a large heavy-bottomed pot over medium-high heat, heat the oil to 350F. Fry in batches for 2-3 minutes until golden and crispy, keeping a close eye on them to avoid burning.
- Put the fried enoki in a bowl and either pour the sauce over them or serve the sauce as a dip, whatever your heart desires. Garnish with chopped scallions.
