Discard

Strawberry Filling

  • 15 g butter, melted
  • 850 g strawberries, hulled and chunked
  • 120 g granulated sugar
  • 35 g all-purpose flour
  • 2 g salt
  • 4 g vanilla extract
  • 8 g lemon juice

Cobbler Topping

  • 100 g sourdough discard
  • 85 g unsalted butter, melted and cooled
  • 70 g granulated sugar
  • 1 large egg
  • 75 g buttermilk
  • 2 g vanilla extract
  • 130 g all-purpose flour
  • 15 g baking powder
  • 3 g salt

Directions

  • Coat a 12-inch cast-iron skillet or 9×13-inch pan with the melted butter. Preheat the oven to 375°F.
  • Add the strawberries to the pan. Combine the sugar, flour, salt, vanilla, and lemon juice over the berries and mix until coated.
  • Whisk the sourdough discard and melted butter together. Add the sugar, egg, buttermilk, and vanilla and whisk. Separately mix the flour, baking powder, and salt, then combine the wet and dry until a thick batter forms.
  • Spread the topping evenly over the strawberries. Bake at 375°F for 40–45 minutes, until golden brown, the berries bubble at the edges, and the topping is baked through.
  • Serve warm with vanilla ice cream.

Ingredients

  • 420 grams (3 cups) all-purpose flour
  • 10 grams (2 teaspoons) salt
  • 70 grams (5 tablespoons) butter, softened
  • 180 grams (3/4 cup) water, heated to 120F
  • 180 grams (3/4 cup) sourdough discard or active starter

Directions

  • Mix the flour and salt in a large bowl or the bowl of a stand mixer.
  • Chop the softened butter into the flour and crumble it between your fingers to a sand-like texture.
  • Heat the water, mix it with the sourdough discard or starter, then pour into the flour and combine until a shaggy dough forms.
  • Knead with the dough hook on low for 5 minutes (or by hand for 5-7 minutes) until a soft, smooth ball forms.
  • Divide the dough into 16 equal pieces (about 50 grams each) and shape into balls. Cover with a damp tea towel.
  • Let the dough balls rest at least 20 minutes (longer is fine) so they roll out easily.
  • Preheat a non-stick skillet over medium heat. Roll each ball out on a lightly floured surface to about a 10-inch circle.
  • Cook about 20-40 seconds until it starts to bubble, then flip and cook another 10-15 seconds.
  • Remove and wrap in a kitchen towel until ready to serve.

Discard, Snack, Toddler Easy

Ingredients

  • 1,000 g sourdough discard best if you use discard 1-10 days old
  • 4 eggs (see Recipe Notes for egg allergies)
  • 113 g melted butter
  • 2 tsp vanilla extract
  • 50 g sugar or other sweetener of your choice
  • Pinch of salt
  • 2 tsp baking soda

Directions

  • Preheat your waffle iron.
  • In a large bowl, whisk together 1,000 g sourdough discard, 4 eggs, 113 g melted butter, 2 tsp vanilla extract, 50 g sugar, 2 tsp cinnamon, and a Pinch of salt.
  • Add 2 tsp baking soda and whisk vigorously. Within about 10 seconds, the batter will become aerated and fluffy—watch the magic happen!
  • Pour the waffle batter into your waffle iron. Sprinkle any add-ins on top, if desired. Cook the waffles in your waffle iron according to the device’s instructions. Enjoy!
