
Ingredients
- 4–6 potatoes (as many as you'd like)
- Cajun butter (melted butter + Cajun seasoning)
- Grated Parmesan
- Chopped parsley
Chipotle Ranch
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 diced chipotle pepper (from a can of chipotles in adobo)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp fresh dill
- 1/4 tsp sea salt
Directions
- Preheat the oven to 400°F.
- Slice the potatoes lengthwise into half-inch slices. Use metal skewers to cut about 1/4 inch apart, then turn the potato 90° and cut the same way to crosshatch. Cut into quarters and square off into bricks.
- Slather in Cajun butter and roast for about 30 minutes.
- While they roast, stir together all the chipotle ranch ingredients.
- For the last few minutes, set the oven to broil until the potatoes have a nice char.
- Garnish with parsley and Parmesan and serve with the chipotle ranch.
