
Ingredients
- Baked sweet potato(es), still warm, cut in half lengthwise
- Olive oil
- Sea salt
- BBQ sauce (store-bought or homemade)
- Thinly sliced red onion
- Thinly sliced jalapenos (optional)
- Shredded rotisserie chicken
- Fresh mozzarella, torn into small chunks
- Cilantro
- Ranch, for drizzling (optional)
Directions
- Bake the sweet potatoes at 400F / 205C until you can easily pierce them with a knife (30-60 minutes, depending on size).
- Preheat the oven to 450F. On a parchment-lined baking sheet, lay both potato halves skin side down. Lightly drizzle with olive oil and top with a piece of parchment. Using a frying pan or heavy skillet, smash each half into a 1/4-1/3" thick oval. Peel off the parchment, drizzle with a little more olive oil, and sprinkle with sea salt. Bake 10-15 minutes until the tops begin to crisp.
- Top both rounds with BBQ sauce, red onion, jalapenos, shredded chicken, and mozzarella. Return to the oven for 10-15 minutes until the cheese is bubbly.
- Rest a few minutes, then transfer to a plate with a broad spatula. Top with a drizzle of ranch (optional) and cilantro. Enjoy!
