
Ingredients
- 1 cup rice
- 4 cups hot water
- 4 cinnamon sticks
- 7 mangos, for the puree (+ 2 more for garnish)
- 1 1/2 cups milk of choice
- 12 oz can evaporated milk
- 14 oz can sweetened condensed milk
- 1 tsp vanilla
Directions
- Add the rinsed rice, cinnamon sticks and hot water to a large bowl. Let it cool, then cover and refrigerate overnight.
- The next day, blend the rice with the 3 cups of soaking water plus 1 extra cup of water until very smooth.
- Strain for a smooth consistency and pour into a large pitcher. Add all the milk, the vanilla, and mix well.
- Make the mango puree: blend all the mango with a splash of water until extra smooth.
- Pour the mango puree into the pitcher and mix into the horchata. Add some chopped mango and ice, mix once more, and serve.
