Chili Cheese Burrito

Ingredients

  • 1.5 lbs ground beef
  • 3 Tbsp taco seasoning (Kristy's homemade, or your own)
  • 1 & 1/2 cups water
  • 1/2 of a small onion, chopped
  • 1/2 cup refried beans
  • 6 Tbsp tomato paste
  • 2 Tbsp chili powder
  • 1 tsp cayenne pepper
  • 1/2 tsp salt
  • 8 oz freshly shredded sharp cheddar cheese
  • Low-carb or flour tortillas

Directions

  • Scramble the ground beef in a skillet over medium heat. Drain any excess grease.
  • Add the onions, water, tomato paste, beans, and seasonings and cook for about 5 minutes, until the onions are tender and the beef mixture has thickened.
  • Add the shredded cheese and stir until melted.
  • Place a heaping 1/4 cup of the beef mixture onto a warmed tortilla and roll it up like a burrito.
