Doner Kebab Sandwich

Ingredients

  • 2 pounds ground beef
  • 1/2 onion, grated
  • 1/4 cup yogurt
  • 1 tsp each garlic, paprika, chili powder, and black pepper
  • Salt, to taste
  • 4 roma tomatoes, quartered
  • Jalapenos
  • 4 large pita

Tahini Sauce

  • 1/2 cup tahini (toasted sesame seed paste)
  • 1 lemon, juiced
  • 1 garlic clove, grated
  • 1/4 cup yogurt
  • Water, to thin, and salt to taste

Red Sauce

  • 1/4 cup oil
  • 1/4 cup tomato paste
  • 2 tbsp ketchup
  • 1 tsp cayenne pepper
  • 1/4 cup water
  • Salt, to taste

To Finish

  • Pomegranate molasses
  • Sumac

Directions

  • Grate the onion into the ground beef. Add the yogurt and season generously with the garlic, paprika, chili powder, black pepper, and salt.
  • Work everything together with your hands until well combined.
  • Ball up the mixture and place it in the center of a piece of parchment paper. Cover with another sheet and carefully spread into a thin, even layer, then roll it up into a large cigar shape.
  • Place on a sheet tray alongside the quartered tomatoes and jalapenos. Bake at 400F for about 15 minutes (pull it early to keep it juicy), then unroll into a thin sheet.
  • Return to the oven under a high broil for a couple of minutes to crisp the edges, then slice.
  • Tahini sauce: whisk the tahini, lemon juice, grated garlic, and yogurt; thin with water and season with salt.
  • Red sauce: stir together the oil, tomato paste, ketchup, cayenne, water, and salt.
  • Warm the pita and pile on the meat, tomato, and jalapeno. Add plenty of tahini sauce and red sauce, then finish with a drizzle of pomegranate molasses and a sprinkle of sumac.
