
Ingredients
- Half a box of rigatoni
- 1 pack white mushrooms
- 1 pack oyster mushrooms
- 1 head of garlic
- 1 shallot
- 1/2 cup heavy cream
- 1/3 cup pasta water
- 1/2 cup parmesan cheese
- 1.5 tbsp miso paste
- 1 tsp red pepper flakes
- 1 tbsp chives
Directions
- Cook the rigatoni in salted water until al dente; reserve 1/3 cup of the pasta water before draining.
- Thinly slice or crush the whole head of garlic, fry it in oil until crispy and golden, then set it aside.
- In the same pan, fry the mixed mushrooms (they shrink down a lot, so use plenty). Don't salt them until they've browned.
- Add the diced shallot and cook until softened.
- Stir in the miso paste and heavy cream and let it come together into a sauce.
- Add the reserved pasta water and parmesan, stirring until glossy and creamy. Season with the red pepper flakes.
- Toss in the cooked rigatoni until well coated.
- Top with the crispy fried garlic and chives, and serve.
