
Ingredients
- 4 golden potatoes, quartered
- 2 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 cup cornstarch
- 1/3 cup shredded parmesan cheese
- 1/2 tsp pepper
- 1 tbsp parsley, chopped
- 1/3 cup unsalted butter
- 5 cloves garlic, minced
- 3/4 cup milk
- 1/2 cup all-purpose flour
Directions
- Quarter the potatoes and add to heavily salted water. Boil until fork-tender, about 15 minutes. Drain and transfer to a large bowl.
- Mash the potatoes until smooth. Mix in the salt, garlic powder, paprika, cornstarch, parmesan, and pepper until fully combined.
- Make the garlic butter paste: melt the butter over low heat, add the minced garlic and saute until fragrant, about 1 minute. Stir in the milk, then remove from heat. Add the flour and mix with a wooden spoon until a thick paste forms.
- Transfer the garlic butter dough into the mashed potatoes and mix until smooth.
- Scoop a tablespoon of the mixture and roll into a ball. Repeat with the remaining mixture.
- Heat oil to 350F (175C). Fry the potato balls in batches until golden brown and crispy, about 5 minutes.
- Serve immediately, sprinkled with chopped parsley and extra parmesan while hot.
