
Ingredients
- Yellow onions, peeled and halved across the middle (1 half per person, plus extra)
- Melted butter or cooking oil, for brushing
- Salt
- Black pepper
Directions
- Peel the onions and slice each one in half across the equator. Set the halves cut-side up in the cups of a muffin tin — the cups hold their shape and catch the buttery juices.
- Brush the tops generously with melted butter or cooking oil and season with salt and pepper.
- Roast in a hot oven until the onions are meltingly soft, sweet, and golden.
- Brush again with melted butter or cooking oil closer to the end of the cook for extra gloss and flavor.
- Transfer to a serving dish and serve warm alongside any meal.
