For the Smash Tacos

  • 500 g ground chicken
  • 2 tsp garlic powder
  • Salt and black pepper, to taste
  • 8 small flour tortillas
  • 1/2 cup breadcrumbs
  • 1 cup shredded iceberg lettuce

For the McChicken Sauce (Canadian version)

  • 1/4 cup light mayonnaise
  • 1/4 cup Miracle Whip

Directions

  • In a small bowl, mix the light mayo and Miracle Whip until smooth. Set aside.
  • In a medium bowl, mix the ground chicken with the garlic powder, black pepper, and salt.
  • Press a thin layer of seasoned chicken onto the back of each flour tortilla, covering the surface evenly, then sprinkle on the breadcrumbs for crunch.
  • Heat a large skillet over medium-high heat with a little avocado oil. Place the tortilla chicken-side down and cook 3-4 minutes until the chicken is golden and fully cooked. Flip and crisp the tortilla side for another 2-3 minutes.
  • Spread a generous amount of McChicken sauce over the crispy chicken and top with shredded lettuce.
  • Fold it up like a taco and serve. Note: this is the Canadian McChicken sauce (sweeter), not the American one.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 lb Italian sausage
  • 1/2 lb ground beef
  • Salt and pepper
  • 1/2 tbsp Italian seasoning
  • 2 tbsp tomato paste
  • 2 cups marinara sauce
  • 3-4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 box lasagna noodles, broken into pieces
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella (freshly shredded melts better)
  • 1/4 cup basil, chopped

Directions

  • Heat the olive oil in a pan over medium heat. Add the diced onion and saute until it starts to lose color, about 7 minutes.
  • Add the minced garlic and cook about a minute, then add the sausage and ground beef along with salt, pepper, and Italian seasoning. Cook until browned.
  • Stir in the tomato paste.
  • Add the marinara sauce, then the chicken broth. Stir in the heavy cream and bring to a boil.
  • Add the broken lasagna noodles. Lower the heat and simmer until the pasta is fully cooked; if the liquid is absorbed and the pasta sticks, add more broth.
  • Turn off the heat and stir in the Parmesan and mozzarella until melted. Stir in the chopped basil and serve.

Ingredients

  • French green beans
  • Sea salt (flaky Maldon salt)
  • Lemon juice and zest of at least 2 lemons
  • Garlic
  • Extra virgin olive oil

Directions

  • Bring a pot of heavily salted water to a boil. Add the green beans and cook about 8 minutes, until tender.
  • Immediately dunk the beans in ice cold water to stop the cooking and preserve the bright green color.
  • Mix together the olive oil, lemon juice, lemon zest, salt and garlic in a bowl. Add the drained green beans and toss to combine. Add more salt if necessary.

  • 1 cup corn flakes, crushed
  • 1 cup flour
  • 2 eggs, beaten
  • Ciabatta bread, for serving

Honey Butter Sauce

  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tbsp brown sugar (or brown sugar replacement)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/4 cup water

Cucumber Salad

  • 1 whole cucumber, sliced
  • 1/4 cabbage, sliced
  • 1 tbsp avocado oil
  • 1/2 lemon, squeezed
  • 1 tbsp sugar (or sugar replacement)
  • 1 tbsp garlic powder
  • 1 tbsp honey
  • 1/2 tbsp salt

Directions

  • Dredge the chicken thigh in flour, then the beaten eggs, then the crushed corn flakes. Press the corn flakes on firmly.
  • Preheat your air fryer to 385F. Add the breaded thigh, give it a light spray of oil, and cook 16 minutes, or until it reaches an internal temperature of 165F.
  • Honey butter sauce: in a pan, add the sesame oil and minced garlic and cook until fragrant. Add the remaining sauce ingredients, reduce the heat, and cook until the sauce has thickened.
  • Cucumber salad: add all the ingredients to a container, close the lid, and shake well.
  • Assemble on toasted ciabatta bread and enjoy.

  • 1/2 head cabbage, sliced
  • Cooked quinoa (to make it a heartier salad)
  • A few handfuls of fresh spinach or greens

Miso Maple Dressing

  • 2-3 Tablespoons miso paste
  • Juice of 1 large lemon
  • 1 teaspoon maple syrup (or to taste)
  • Salt and pepper

Directions

  • Roast the sliced cabbage at 400F for 20-30 minutes, until golden brown.
  • Whisk the dressing: miso paste, lemon juice, maple syrup, salt and pepper. Do it to taste; it is really hard to mess up.
  • Toss the roasted cabbage with cooked quinoa over a bed of spinach, then drizzle with the miso maple dressing.

Ingredients

  • Wide pasta (fettuccine or tagliatelle)
  • Shrimp, peeled
  • Garlic, sliced
  • Olive oil
  • Gochujang (Korean chili paste)
  • Heavy cream
  • Grated parmesan (plus more to finish)
  • Butter
  • Fresh parsley, to garnish
  • Salt

Directions

  • Cook the wide pasta in salted boiling water until al dente; reserve some pasta water.
  • Meanwhile, sear the shrimp in a little oil until just cooked and set aside.
  • In the same pan, fry the sliced garlic in olive oil until fragrant.
  • Stir in the gochujang, then add the cream and grated cheese to create a smooth sauce.
  • Add the cooked pasta and toss to coat, loosening with a splash of pasta water as needed.
  • Finish with a knob of butter for gloss, then fold the shrimp back in.
  • Plate and top with extra grated parmesan and chopped parsley.

For the yogurt

  • 1 cup thick / Greek yogurt
  • 1 clove garlic, grated
  • Chopped fresh dill
  • Salt
  • A squeeze of lemon juice

For the chili butter

  • 2 tbsp butter
  • A couple of teaspoons Aleppo (pul biber) chili flakes

For the eggs

  • 2 eggs
  • A splash of white wine vinegar (for poaching)

To finish

  • Chopped fresh dill
  • Black pepper
  • Crusty bread, to serve

Directions

  • Add the yogurt to a bowl with the grated garlic, chopped dill, salt, and a squeeze of lemon juice; mix well. Set aside for about 30 minutes to come to room temperature.
  • Melt the butter and stir in the Aleppo chili flakes.
  • Add a splash of white wine vinegar to a pot of boiling water. Drop in the eggs and poach until they start to float, then remove.
  • Spoon the yogurt onto a plate and set the poached eggs on top. Drizzle with the chili butter, scatter over chopped fresh dill and black pepper, and serve with crusty bread.

  • 6 oz noodles
  • 2 tbsp sesame paste
  • 1 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 clove garlic, minced
  • 1 tsp sugar
  • 1 tsp vinegar
  • 1 tsp sesame oil
  • 1 tsp sriracha
  • 2 tbsp reserved noodle water
  • Optional garnish: cucumbers, peanuts, chili oil

Directions

  • Boil the noodles until 1 minute before al dente and reserve some of the noodle water.
  • In a bowl, mix the sesame paste, peanut butter, soy sauce, garlic, sugar, vinegar, sesame oil, sriracha, and noodle water until smooth.
  • Toss the noodles with the sauce until well coated.
  • Plate the noodles and garnish with cucumbers, peanuts, and chili oil if desired.

Ingredients

  • 8 oz lasagna noodles, broken in half
  • 1 (24 oz) jar tomato sauce
  • 8 oz shredded whole-milk mozzarella cheese

Directions

  • Bring a large pot of lightly salted water to a boil. Cook the lasagna noodles, stirring occasionally, until tender yet firm to the bite, 10 to 12 minutes.
  • Strain the noodles and return them to the pot. Add the tomato sauce and cook over medium heat until heated through, about 5 minutes.
  • Add the cheese and stir until melted. Serve immediately.

Ingredients

  • 6 boneless skinless chicken thighs, chopped into 1" chunks
  • 1 yellow onion, sliced (stem to root)
  • 4 eggs, beaten lightly (not fully homogenized)
  • 1 tbsp sake (optional)
  • Parsley, to garnish
  • Green onions, to garnish

Sauce

  • 2/3 cup dashi
  • 2 tbsp mirin
  • 3 tbsp tamari (25% less sodium)
  • 2 tsp honey
  • Mix until the honey is dissolved

Directions

  • Take the eggs out of the fridge first — room-temperature eggs work best.
  • Cut the chicken thighs into chunks and, if you like, marinate briefly with the sake to clean and tenderize the meat (optional).
  • While the chicken marinates, slice the onion and stir together the sauce.
  • Over medium heat, add the onions to a skillet and pour in the sauce. Bring to a gentle bubbling simmer, about 3 minutes.
  • Add the chicken to the same pan and cook through, about 7–8 minutes.
  • While the chicken cooks, beat the eggs gently — don't overbeat; you want the whites and yolks both visible for a nice non-uniform look.
  • Once the chicken is cooked through, pour the eggs evenly over the whole pan and cook. Cover to help steam-cook if you like.
  • Serve over steamed rice.
  • Garnish with parsley and green onions (optional).
