Ingredients

  • Ground beef
  • Spice blend: allspice, coriander, cinnamon, black pepper, chili powder, cumin
  • Onion and fresh herbs, finely chopped
  • Pita bread
  • Oil, for the pan
  • Salt
  • White dip to serve (tahini or garlicky yogurt sauce), plus chopped cilantro

Directions

  • Mix the ground beef with the spice blend, chopped onion and herbs, and salt.
  • Split the pita breads open and stuff with a thin, even layer of the spiced meat.
  • Pan-fry the stuffed pitas over medium heat, pressing down, until golden and crisp and the meat is cooked through — flip to brown both sides.
  • Slice into wedges and serve with a white dip topped with chopped cilantro.

  • 2 tablespoons ricotta
  • 2 thick slices sourdough bread
  • Butter, for the eggs and toast
  • Grated parmesan, to finish
  • Chili flakes, to finish
  • Chopped chives, to finish
  • Salt

Directions

  • Toast the sourdough (griddle or toast in a little butter until golden).
  • Softly scramble the eggs over low heat in butter, folding in the ricotta near the end so the eggs stay loose and creamy. Season with salt.
  • Spoon the creamy ricotta eggs over the toasted sourdough.
  • Finish with grated parmesan, chili flakes, and chives.

  • Spaghetti
  • Greek yogurt
  • Garlic, minced or grated
  • Fresh parsley, finely chopped
  • Dried oregano
  • Salt and pepper

Directions

  • Cook the spaghetti in well-salted water until al dente, then drain and reserve a little of the pasta water.
  • In a large bowl, stir together the Greek yogurt, minced garlic, chopped parsley, oregano, salt and pepper.
  • Add the hot drained pasta to the bowl and toss to coat, loosening with a splash of the reserved pasta water until creamy.
  • Serve fresh. So creamy, garlicky and fresh, like toum in pasta form.

  • 2 eggplants, cut into wedges
  • 4 Tbsp miso paste
  • 3 Tbsp maple syrup or agave syrup
  • 4 Tbsp (sesame) oil
  • Salt to taste
  • 1 Tbsp white wine or rice vinegar
  • Sesame seeds, optional

Peanut sauce

  • 2 Tbsp peanut butter
  • 1 Tbsp soy sauce
  • 1 Tbsp vinegar
  • 1 Tbsp agave or maple syrup
  • Optional add-ins: garlic, sriracha

Directions

  • Cut the eggplants into wedges.
  • Mix the miso, maple syrup, oil, salt, and vinegar. Add to the wedges and fully coat them.
  • Optional: dip one side of the wedges in sesame seeds. Place on a baking tray.
  • Bake at 200C/400F for 25-30 minutes, flipping halfway through.
  • For the peanut sauce, mix the peanut butter, soy sauce, vinegar, and agave/maple syrup (plus optional garlic/sriracha) until creamy.
  • Serve the eggplant with the peanut sauce.

  • 1 lb shrimp, peeled and deveined
  • 1 cup onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/4 cup celery, chopped
  • Salt and pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 tbsp butter
  • 5 tbsp flour
  • 1 tbsp minced garlic
  • 1 tsp thyme
  • 1 tsp tarragon
  • 1/2 tsp smoked paprika
  • 1 box Red Lobster cheddar bay biscuit mix
  • 3/4 cup milk
  • 1/2 cup shredded cheddar
  • Olive oil, for searing

Directions

  • In a pot, heat olive oil.
  • Sear the shrimp with salt and pepper for 2 to 3 minutes. Remove and set aside.
  • In the same pan, add the onions, bell pepper and celery. Cook 4 to 5 minutes.
  • Add the butter and stir.
  • Sprinkle the flour over the vegetables and stir until absorbed.
  • Add the chicken broth and bring to a simmer.
  • Pour in the heavy cream and stir.
  • Add the seasoning: garlic, thyme, tarragon, smoked paprika, and a little more salt and pepper. Cook 2 to 3 minutes.
  • Add the shrimp back in, then remove from the heat.
  • Pour the soup evenly into oven-safe bowls.
  • Prepare the biscuit mix per the box directions (with the milk and shredded cheddar) and spoon evenly over the soup.
  • Bake at 400F for about 15 minutes, or until golden brown.
  • Brush with the garlic butter mixture from the biscuit box and enjoy!

  • Ground beef and veal, mixed (or ground chicken)
  • 1 onion, chopped
  • 1 garlic clove, minced
  • Tomato paste
  • Salt and pepper
  • Olive oil or ghee

Garlic Yogurt Sauce

  • 2 parts plain yogurt
  • 1 part sour cream
  • A little garlic, minced
  • Pinch of salt

To Finish

  • Dried mint
  • Fresh parsley, chopped
  • Paprika
  • Cayenne
  • Chili oil melted with butter (optional)

Directions

  • Heat olive oil or ghee in a large skillet. Add the chopped onion and minced garlic.
  • Add the ground meat (a beef-and-veal mix, or chicken) and cook, breaking it up.
  • Meanwhile, boil the pasta shells in salted water until al dente, then drain.
  • Make the garlic yogurt sauce: stir together 2 parts yogurt, 1 part sour cream, a little garlic and a pinch of salt until thick.
  • Stir tomato paste and salt into the cooked meat; cook through but keep it juicy (don't overcook).
  • Optional: melt a little chili oil with butter for drizzling.
  • Plate the shells, top with the meat sauce, then the garlic yogurt sauce.
  • Finish with dried mint, fresh parsley, paprika, cayenne and the chili butter.

Ingredients

  • 2 to 3 eggplants, grilled and peeled (about 1 part eggplant to 2 parts egg)
  • 5 eggs, beaten
  • 1 red onion, chopped
  • 2 tomatoes, chopped
  • Cooking oil
  • Fish sauce (patis), to taste
  • Pepper, to taste

Directions

  • Grill the eggplants until the skins are charred, brush with a little oil, then cover and let them steam so the skins slip off easily. Peel and chop the flesh.
  • Heat oil in a pan over medium heat and saute the onion until soft (don't let it burn).
  • Add the tomatoes, season with pepper, and cook them down.
  • Stir in the chopped eggplant (about 1 part eggplant to 2 parts egg).
  • Season with a splash of fish sauce (patis).
  • Pour in the beaten eggs and gently scramble everything together.
  • Raise the heat slightly toward the end to dry it out; the finished dish should be fairly dry, not soupy.
  • Serve hot with steamed rice.

  • 900g chicken breast, cooked and cubed
  • 1 box (16oz) pasta
  • 160g Bolthouse Caesar dressing
  • 160g fat-free cottage cheese, blended with 100mL fat-free milk
  • 10 slices center-cut bacon, cooked and chopped
  • 70mL reserved pasta water
  • Green onions, chopped
  • Black pepper

Directions

  • Cook and cube the chicken breast. Cook the pasta and reserve 70mL of the pasta water. Cook and chop the bacon.
  • Blend the cottage cheese with the milk until smooth, then stir in the Caesar dressing to make the sauce.
  • Combine the pasta, chicken, bacon, green onions and sauce; season with black pepper and loosen with the reserved pasta water. Makes 5-6 meal-prep servings (about 630 cal / 58g protein each).

Noodle Dough

  • 3 cups flour
  • 1 cup water

For Cooking

  • 6 cups water, for boiling
  • 1 tsp salt, for boiling

Directions

  • Make the dough: in a large bowl, mix the flour and water with your hands until shaggy, about 2 minutes.
  • Knead for 3 minutes until the dough is smooth.
  • Bring a pot of water to a boil over medium heat and add the salt.
  • Using kitchen shears, cut the edge of the dough ball directly into the pot and let the noodles cook until they float, about 5 minutes.
  • Once they float, remove and toss with your favorite sauce and enjoy.

  • 200g ground pork or chicken
  • 3 eggs
  • 1 tbsp rice wine (optional)
  • 1 tbsp oil
  • 1 bowl of rice

For the Sauce

  • 1 tbsp soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp oyster sauce
  • 1/2 tsp rice vinegar
  • 1/2 tsp sugar
  • 1/4 cup water
  • Salt and pepper to taste
  • 1/2 tbsp cornstarch (mixed with 1 tbsp water)

Directions

  • Mix all the sauce ingredients in a bowl.
  • Heat oil in a pan and stir-fry the ground pork or chicken until browned. Add a splash of rice wine if using.
  • Make space in the center, crack in three eggs, and let them cook to your desired doneness.
  • Pour in the sauce, then add the cornstarch slurry to thicken it. Stir everything together.
  • Serve over a bowl of rice and enjoy.
