Ingredients

  • Yellow onions, peeled and halved across the middle (1 half per person, plus extra)
  • Melted butter or cooking oil, for brushing
  • Salt
  • Black pepper

Directions

  • Peel the onions and slice each one in half across the equator. Set the halves cut-side up in the cups of a muffin tin — the cups hold their shape and catch the buttery juices.
  • Brush the tops generously with melted butter or cooking oil and season with salt and pepper.
  • Roast in a hot oven until the onions are meltingly soft, sweet, and golden.
  • Brush again with melted butter or cooking oil closer to the end of the cook for extra gloss and flavor.
  • Transfer to a serving dish and serve warm alongside any meal.

  • Water (equal to the egg)
  • Silken tofu
  • Deveined shrimp
  • Green onions, sliced

Sauce

  • Cooking oil
  • Sesame oil
  • Soy sauce
  • Rice vinegar
  • Sugar

Directions

  • Beat together one part egg and one part water until smooth.
  • Slice the silken tofu and arrange it in a baking dish. Lay the deveined shrimp on top.
  • Strain the beaten egg over the tofu and shrimp to remove froth and bubbles, so the custard sets smooth.
  • Steam for 8 to 10 minutes, until the egg is set and custardy.
  • In a separate pan, heat the cooking oil, sesame oil, soy sauce, rice vinegar, and sugar until it sizzles. Adjust to taste (she likes it a little on the sweet side).
  • Pour the hot sauce over the steamed egg, top with green onions, and serve with rice.

  • 1/2 onion
  • 1.5 cups water
  • Some kimchi
  • 1 can tuna
  • Green onions or chives

Sauce

  • 1 spoon sugar
  • 3 spoons gochugaru
  • 3 spoons mirin
  • 1 spoon sesame oil
  • 1 spoon corn syrup
  • 0.5 spoon fish sauce
  • Peppers

Directions

  • Cut the radish into medium pieces; chop the onion and some kimchi.
  • Add all the sauce ingredients to a small bowl and mix.
  • In a pot, add the radish and water and bring to a boil. Add the sauce and boil for 5 more minutes.
  • Add the onions, kimchi, and tuna. Let it boil down for 20 more minutes (add these once the radish is soft).
  • Serve over rice.

Ingredients

  • 2 big handfuls of lettuce (roughly 2.5 cups)
  • 6 slices each: ham, pepperoni, salami, provolone, tomato
  • 1/4 cup pepperoncini
  • 1/4 cup red onion
  • 1/4 to 1/3 cup mayo
  • 2/3 tbsp olive oil
  • 2/3 tbsp red wine vinegar
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • 1 sub roll

Directions

  • On a large cutting board, pile the lettuce, ham, pepperoni, salami, provolone, tomato slices, pepperoncini, and red onions. Start chopping.
  • Once it's a good rough chop, add the mayo, olive oil, red wine vinegar, Italian seasoning, and salt and pepper to taste.
  • Keep chopping until everything is well mixed and chopped to your preference.
  • Scoop it into a sub roll.
  • For the full deli effect, wrap it tightly in parchment paper for a couple of minutes, then slice in half and enjoy.

Ingredients

  • Half a box of rigatoni
  • 1 pack white mushrooms
  • 1 pack oyster mushrooms
  • 1 head of garlic
  • 1 shallot
  • 1/2 cup heavy cream
  • 1/3 cup pasta water
  • 1/2 cup parmesan cheese
  • 1.5 tbsp miso paste
  • 1 tsp red pepper flakes
  • 1 tbsp chives

Directions

  • Cook the rigatoni in salted water until al dente; reserve 1/3 cup of the pasta water before draining.
  • Thinly slice or crush the whole head of garlic, fry it in oil until crispy and golden, then set it aside.
  • In the same pan, fry the mixed mushrooms (they shrink down a lot, so use plenty). Don't salt them until they've browned.
  • Add the diced shallot and cook until softened.
  • Stir in the miso paste and heavy cream and let it come together into a sauce.
  • Add the reserved pasta water and parmesan, stirring until glossy and creamy. Season with the red pepper flakes.
  • Toss in the cooked rigatoni until well coated.
  • Top with the crispy fried garlic and chives, and serve.

Ingredients

  • Pork shoulder or pork collar, cut into long strips
  • Store-bought char siu (BBQ pork) marinade
  • Honey, for glazing

Directions

  • Coat the pork strips well in the store-bought char siu marinade (a longer marinade is better, but even a quick coat works for the 80/20 shortcut).
  • Air fry at around 400F for about 15 minutes, flipping halfway and basting with more marinade, until caramelized and cooked through.
  • Brush the strips with honey (thinned with a little marinade) and give a final short blast in the air fryer to glaze.
  • Rest briefly, then slice and serve over rice or with greens.

Chicken

  • 2 boneless skinless chicken breasts (butterflied or pounded even)
  • Olive oil, to coat

Blackening seasoning

  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp cayenne (to taste)
  • Salt + black pepper

Pan sauce

  • 2 tbsp chopped sun-dried tomatoes
  • 2 cloves garlic, minced (or a pinch of garlic seasoning)
  • 1/2 cup chicken stock
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan
  • Fresh basil, sliced, to finish

Directions

  • Stir the blackening spices together in a small bowl.
  • Rub the chicken all over with olive oil, then season thoroughly on both sides with the spice blend.
  • Sear front side down in a very hot (cast iron) skillet until well blackened, a few minutes.
  • Transfer the skillet to a hot oven and finish for about 10 minutes, until the chicken reaches 165F. Rest.
  • In the same pan, make a quick sauce: sun-dried tomatoes, garlic, chicken stock and cream, simmered until slightly thickened, then stir in the parmesan.
  • Slice the chicken, spoon the pan sauce over, and finish with fresh basil.

  • Warm chicken broth or stock (1:1.5 ratio of eggs to broth)
  • 1 tsp light soy sauce
  • 1 tsp sesame oil
  • Chopped green onions

Directions

  • Crack the eggs into a bowl set on a scale.
  • Add WARM chicken broth or stock at a ratio of 1:1.5 (eggs to liquid). Mix well.
  • Strain the mixture for a smoother texture and remove any surface bubbles with a spoon or a kitchen towel.
  • Pour into a heatproof dish. Steam for 8-10 minutes over medium heat.
  • Turn off the heat and leave the dish in the steamer for 5 more minutes. Make sure the eggs are cooked through.
  • Drizzle with sesame oil and light soy sauce, and garnish with chopped green onions.

  • Boneless chicken breast
  • 1 potato, boiled and peeled
  • 1/2 red onion
  • 1 egg
  • Corn flour (cornstarch)
  • Black pepper powder and salt, to taste
  • Oil, for brushing / frying

Directions

  • Add the chicken, boiled potato, red onion, egg, corn flour, black pepper and salt to a chopper or food processor and blend to a smooth paste.
  • With gloved or oiled hands, shape the mixture into small nuggets.
  • Brush lightly with oil and arrange in the air fryer basket (or use a pan of hot oil).
  • Fry or air fry at 180C (355F) for about 20 minutes, until golden.
  • Serve hot with ketchup.

  • 1 small/medium cabbage, cut into 1/2-inch half-moon slices (about 6 slices)
  • 2 1/2 cups freshly grated Parmesan cheese
  • 4 tbsp olive oil, plus more for the other side
  • 1 1/2 tbsp Italian seasoning
  • Chopped fresh parsley, optional
  • Chopped pepitas, optional

Directions

  • Preheat the oven to 400F. Line a sheet pan with parchment paper (or use a nonstick sheet pan).
  • Add the Parmesan to the sheet pan, then add the seasoning and the oil. Mix together to make a paste. Divide into 5-6 equal portions and flatten each into a half-moon shape large enough for a cabbage slice. Place a cabbage slice on top of each Parmesan mound and spread out. Drizzle the tops with a little more oil and seasoning.
  • Bake for 16-19 minutes, until all the edges of the cheese are browned.
  • Remove from the oven, let cool a couple of minutes, drain the excess oil, then carefully lift the edges of the cheese and use a spatula to flip the slices over. Bake for another 10 minutes.
  • Top with parsley and pepitas.
