Weeknight Meals

Ingredients

  • 1 English cucumber, sliced
  • 2 Tbsp whipped cream cheese
  • 2 Tbsp onion & chive cream cheese
  • 1/4 cup red onion, chopped
  • 1 Tbsp capers
  • 4 oz smoked salmon
  • Everything but the bagel seasoning
  • Salt and pepper, to taste

Directions

  • Slice the cucumber and add it to a bowl with the chopped red onion, capers, and smoked salmon.
  • Add both cream cheeses and toss to coat everything.
  • Season generously with everything but the bagel seasoning, plus salt and pepper to taste. Serve as a snack or a light meal.

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1 packet French onion soup mix
  • 3 Tbsp olive oil
  • 2 onions, chopped
  • 1 1/2 cups long-grain rice
  • 2 cups chicken stock
  • 3 Tbsp sour cream (or heavy cream or cream cheese)
  • 1 large handful spinach leaves

Directions

  • In a large frying pan, saute the onions with a little butter or oil and some salt until cooked through, about 7 minutes. Remove and set aside.
  • Coat the chicken with the French onion soup mix. Heat 3 Tbsp oil in the same pan and sear the chicken on both sides until golden, about 2 minutes per side. Remove from the pan.
  • Add the rice to the same pan and cook, stirring, for 1 minute. Add the stock, sour cream, and a little salt; bring to a simmer for 3-4 minutes.
  • Return the onions, spinach, and chicken to the pan. Cover and simmer 20-25 minutes, until the rice is tender and the chicken is cooked through.

Ingredients

  • 2 cups anchovy broth
  • 1.5 heaping tbsp soybean paste (doenjang)
  • 0.5 tbsp gochujang
  • Onion, chopped
  • Korean squash (or zucchini), chopped
  • Tofu, cubed
  • Spinach
  • Enoki mushrooms

Directions

  • Add 2 cups of broth to a pot and bring to a boil.
  • Once boiling, add 1.5 heaping tablespoons of fermented soybean paste.
  • Add 0.5 tablespoons of gochujang.
  • Add the chopped veggies (onion, squash, spinach) and tofu.
  • Boil for ~4 minutes, or until the veggies are soft.
  • Add the enoki mushrooms on top and boil with the lid on for 1 more minute.
  • Serve with a bowl of rice and your favorite side dishes, and enjoy!

Ingredients

  • 1 kg chicken thighs (bone-in, skin on)
  • 2/3 cup white miso
  • 2 tbsp white sugar
  • 1/3 cup sake
  • 1/3 cup mirin
  • Sesame seeds and spring onions, to garnish (optional)

Directions

  • For the marinade, whisk the miso, sugar, sake and mirin in a bowl until smooth. Add the chicken thighs and toss to coat. Cover and refrigerate a few hours (up to 48 hours for more flavor).
  • Preheat the oven to 400F (200C). Let the chicken come to room temperature, then place skin side up on a lined baking tray. Bake for 20 minutes.
  • Remove the tray and spoon the rest of the marinade over the chicken. Turn the oven up to 450F (220C) and bake another 15-20 minutes, until beginning to char and cooked through.
  • Let cool slightly, garnish with sesame seeds and spring onions, and serve.

Ingredients

  • 1.5 lbs lean boneless skinless chicken thighs (cut into 1-inch dice)
  • 1 cup raw rice
  • 3 1/2 tbsp vinegar
  • 6 tbsp soy sauce
  • 1/4 cup water
  • 1/4 onion
  • 5 cloves garlic
  • 2 bay leaves
  • 2 tsp black pepper

Directions

  • Prep takes 5-10 minutes: dice the chicken and add everything to the rice cooker.
  • Press the button down and let it cook, about 30-45 minutes depending on your rice cooker. (Great to start in the morning before work.)

Ingredients

  • Corn kernels (to taste)
  • 50-70 g butter
  • 1-2 tbsp miso (or doenjang)
  • Black pepper
  • 1/2 tsp chicken seasoning powder
  • Green onions, sliced
  • Cooked white rice

Directions

  • Saute the corn in the butter until lightly caramelized.
  • Stir in the miso, then season with black pepper and chicken seasoning powder to taste.
  • Fold the corn through cooked white rice. Top with sliced green onions and enjoy with any protein or vegetables.

Ingredients

  • 1/2 pointed cabbage, cut into wedges
  • 1 generous tsp gochujang paste (or more for extra spice)
  • 1 generous tbsp soft butter
  • 4-5 tbsp water
  • Neutral oil, for searing
  • Toasted sesame seeds, to garnish

Directions

  • Mash the gochujang paste into the soft butter to make a quick gochujang butter; set aside.
  • Cut the pointed cabbage into wedges. Sear in a little oil over medium-high heat on all sides until you get a beautiful charred surface.
  • Add the water, cover with a lid, and cook 2-3 minutes until the water has evaporated.
  • Turn off the heat and add the gochujang butter. The residual heat melts it and glazes the cabbage.
  • Sprinkle with toasted sesame seeds and serve.

For the Tofu

  • 16 oz extra firm tofu, cut into 1/2-inch cubes
  • 1/2 tsp coarse sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp white pepper
  • 1/4 tsp ginger powder
  • 1/4 tsp Sichuan peppercorn powder
  • 1 tbsp avocado oil
  • 4 tbsp potato starch (or tapioca starch), divided
  • Avocado oil spray, for the air fryer basket

For the Salt & Pepper Seasoning

  • 2 spring onions, finely chopped
  • 4 large garlic cloves (about 0.5 oz), finely minced
  • 1 fresno chili pepper, seeds removed, finely chopped
  • 1/2 tbsp avocado oil
  • 1 tsp coarse sea salt
  • 1/4 tsp five spice powder
  • 1/4 tsp white pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp Sichuan peppercorn powder

Directions

  • Drain the tofu and pat dry with paper towels. Slice into cubes slightly larger than 1/2-inch, then pat dry again.
  • Combine the tofu seasonings (salt through Sichuan peppercorn powder) in a large bowl. Add the cubed tofu and gently toss. Add the oil, then sprinkle in the starch 2 tbsp at a time until all sides are evenly coated.
  • Preheat the air fryer, then spray the basket with oil. Spread the tofu evenly with space between the pieces. Air fry at 400 F for 10 minutes. Flip carefully, spray with more oil, and air fry 5 minutes more until golden and crispy.
  • Meanwhile, chop the spring onions, garlic, and chili pepper, reserving some for garnish. Combine the salt & pepper seasoning spices separately.
  • Heat the 1/2 tbsp oil in a preheated saute pan over medium heat. Saute the aromatics for 1 minute with a pinch of salt.
  • Add the cooked tofu and sprinkle over half the salt & pepper seasoning. Toss for 30 seconds.
  • Transfer to a serving plate, garnish with the reserved scallions and chili, sprinkle with extra seasoning, and serve immediately with more on the side.

Ingredients

  • 2 cups rice + the regular amount of water for that rice, minus 1/2 cup
  • 1 lb chicken
  • 1/2 onion
  • 1/2 cup light soy sauce
  • 1/4 cup vinegar
  • 1.5 tbsp sugar
  • 5-6 cloves garlic
  • 3-4 bay leaves
  • Salt and pepper

Directions

  • Wash the rice, drain, and add it to the rice cooker with the water (the regular amount for 2 cups of rice, minus 1/2 cup).
  • Add the chicken, onion, garlic, soy sauce, vinegar, and sugar.
  • Give it a mix, season with salt and pepper, and tuck in the bay leaves.
  • Cook on the rice cookers regular white rice setting.
  • Remove the bay leaves and serve.

Ingredients

  • 1 lion's mane flush
  • 2 tbsp Old Bay seasoning
  • Oil
  • Salt and pepper
  • Bunch of parsley
  • Bunch of coriander (cilantro)
  • 2 chillies
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil (EVOO)
  • 1 tbsp red wine vinegar
  • Pita, to serve

Directions

  • Make the chimichurri: mix together the parsley, coriander, chillies, garlic, EVOO, red wine vinegar, salt, and pepper in a bowl.
  • Heat oil in a skillet, add the lion's mane flush, and season with Old Bay. Sear for 3-4 minutes on each side.
  • Press the mushroom down with a weighted pan to release moisture, then season with more Old Bay and sear again.
  • Slice the mushroom into strips and sear the slices.
  • Warm the pita, then assemble: layer chimichurri, the sliced mushroom steak, and more chimichurri. Enjoy.
