Weeknight Meals

Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1/4 cup olive oil
  • 1 large lemon, juiced (2 tbsp)
  • 4 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp chili pepper flakes
  • Salt and pepper, to taste
  • 1/4 cup grated parmesan cheese

Directions

  • Preheat your oven to 400F (or air fryer to 375F).
  • Rinse and pat dry the chicken pieces and transfer to a ziploc bag.
  • In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, paprika, onion powder, oregano, chili flakes, salt, pepper, and parmesan. Pour 3/4 of the mixture into the bag, seal, and coat the chicken. Refrigerate at least 30 minutes or up to overnight. Reserve the remaining 1/4 marinade in the fridge (kept separate from the raw chicken) for serving.
  • Place the chicken on a baking sheet and bake for 17-20 minutes (or air fry for about 12 minutes), until cooked through.
  • Spoon the reserved marinade over the chicken to serve and dip.

  • 4 servings fettuccine (gluten free if desired)
  • 4 garlic cloves, minced
  • 10 sun-dried tomatoes, chopped
  • 1 tbsp Italian seasoning
  • 1 tbsp balsamic vinegar
  • 3 tbsp tomato paste
  • 2 cups cherry tomatoes
  • 1 cup water or vegetable broth
  • 7 oz full-fat canned coconut milk (half a can, thick cream only)
  • 3 tbsp nutritional yeast
  • Salt and pepper, to taste
  • 2 cups baby arugula
  • 1/2 cup flat-leaf parsley, chopped
  • Vegan parmesan, optional

Directions

  • Cook the fettuccine in salted boiling water until al dente. Reserve a splash of pasta water, then drain.
  • In a large pan over medium heat, saute the minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant. Stir in the Italian seasoning, balsamic vinegar, and tomato paste.
  • Add the cherry tomatoes and the water or vegetable broth. Simmer until the cherry tomatoes burst and soften, about 8-10 minutes.
  • Stir in the coconut cream and nutritional yeast and simmer until creamy. Season with salt and pepper.
  • Add the drained pasta and toss to coat, loosening with a splash of pasta water if needed.
  • Fold in the baby arugula and parsley until just wilted. Top with vegan parmesan if using, and serve.

  • 1 tbsp salsa macha or chili crisp, plus more for topping
  • Chives, to taste

Directions

  • Preheat a pan for 2 minutes on high. Add the heavy cream and salsa macha (or chili crisp). Lower the heat to medium and simmer for 1 minute; the cream will caramelize.
  • Crack in the eggs and cover. Cook for 2-3 minutes until the whites set.
  • Top with chives, a pinch of seasoned salt, and more salsa macha or chili crisp. Serve right away.

Chicken

  • Chicken (bone-in thighs or a cut-up whole chicken)
  • Green onions
  • A few slices of ginger
  • Cold water to cover

Scallion Oil

  • Green onions, white and green parts separated
  • 1 red onion
  • A few slices of ginger
  • Neutral oil

Sauce

  • Sugar
  • Oyster sauce
  • Soy sauce
  • Some of the scallion oil from above

To Serve

  • Steamed rice

Directions

  • Add the chicken to a pot of cold water with green onions and ginger. Bring to a boil, then simmer for 8 minutes. Turn off the heat and cover for 15 minutes.
  • Make the scallion oil: heat oil in a pan and cook the white parts of the green onion, the red onion and the ginger until lightly browned, then add the green parts and cook until browned. Strain the oil.
  • Cool the poached chicken in ice water, then shred or pull it apart by hand.
  • Make the sauce: combine sugar, oyster sauce, soy sauce and some of the scallion oil.
  • Toss the chicken with half of the sauce, plate it over steamed rice, and spoon the remaining sauce on top.

  • 1 large tortilla or wrap (a high-fiber/low-carb wrap works too)
  • 3 eggs
  • A couple scoops of cottage cheese
  • Salt and pepper
  • Your favorite veggies (tomatoes and spinach shown)
  • A handful of grated mozzarella
  • Herbs and seasonings of choice
  • Optional: sun-dried tomatoes, feta, goat cheese, mushrooms

Directions

  • Grab a baking dish with a little depth and lay the tortilla in it to form a crust.
  • Add the eggs, cottage cheese, salt and pepper, and scramble/mix together right in the dish.
  • Scatter over your favorite veggies (tomatoes and spinach).
  • Top with the grated mozzarella, more black pepper, and any herbs and seasonings you like.
  • Bake at 350F for about 20 to 25 minutes, until set. Give it the jiggle test – it should not be jiggly.
  • Serve warm, great with a little hot sauce.

Tofu

  • Organic silken (soft) tofu

Yuzu Dipping Sauce

  • Roasted white sesame seeds, ground
  • Kewpie salad dressing
  • Yuzu shoyu
  • Chili powder (to taste)
  • Chopped scallion and cilantro

Directions

  • Pat the tofu dry and cut into cubes. Place on parchment paper in the air fryer basket, spaced apart. Air fry at 200°C for 15-20 minutes (time varies by machine and how chewy you want the skin).
  • Take the tofu out, flip each piece, and air fry a further 15-20 minutes until golden and chewy-crisp.
  • Make the dipping sauce: grind the roasted white sesame, then mix with Kewpie dressing, yuzu shoyu, chili powder, and chopped scallion and cilantro.
  • Serve the tofu hot with the dipping sauce (lettuce leaves on the side).

Ingredients

  • 2 7-oz white-fleshed fish fillets (Chilean sea bass is the favourite here)
  • Salt
  • Shaoxing wine
  • 1 large knob ginger
  • 5 scallions
  • 2 tbsp light soy sauce
  • 1.5 tsp sugar
  • 1 tsp sesame oil
  • 3 tbsp warm water
  • 3 tbsp neutral oil

Directions

  • Season the fish with salt and lightly drizzle Chinese cooking wine over it.
  • Peel and julienne the ginger as thin as possible, slicing a few pieces to lay on the bottom of the plate.
  • Cut the scallions into 3-inch segments. Save 4-5 segments for the bottom of the plate and thinly slice the rest lengthwise.
  • Add the sliced ginger and scallion segments to the bottom of a plate and place the fish on top.
  • Steam the fish for 10-12 minutes on medium heat while you make the sauce by combining soy sauce, sugar, sesame oil, and water.
  • Remove the fish, draining out all the liquid, and add the julienned ginger and scallions on top.
  • Pour the sauce over the fish, then heat the neutral oil right before it starts to smoke.
  • Pour the hot oil over the aromatics and enjoy with rice.

Arayes

  • 1 lb ground lamb
  • 1/2 onion (grated and drained)
  • 1/4 cup parsley (chopped)
  • 1/4 cup cilantro (chopped)
  • 3 cloves garlic (grated)
  • 1 tsp baharat
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 4-5 pita
  • Olive oil, for cooking

Sauce

  • 1/2 cup Greek yogurt
  • 2 tbsp parsley (chopped)
  • 2 tbsp cilantro (chopped)
  • 2 tbsp lemon juice
  • 1/4 cup tahini
  • 1 tsp baharat
  • 2 cloves garlic (grated)
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Directions

  • Grate the onion and squeeze out the liquid using a clean kitchen towel.
  • Combine the onion, grated garlic, parsley, cilantro, spices, and olive oil in a bowl.
  • Thoroughly incorporate the mixture with the lamb.
  • Cut the pita in half, stuff with the lamb, and drizzle generously with olive oil.
  • Heat a heavy-bottom pan on medium and sear the arayes meat-side down for 1-2 minutes until it gets a nice crust, then toast the pita sides until golden brown and crisp.
  • Place in an oven set at 350°F until cooked through (10-15 minutes). Meat should register around 155°F.
  • Make the sauce by combining all sauce ingredients, adjusting for personal taste.
  • Serve the arayes with the sauce and enjoy.

Hot Pot Bowl

  • Napa cabbage, chopped
  • Bok choy, halved
  • Enoki mushrooms
  • Green onions or garlic chives
  • Thin-sliced pork or beef (hot pot slices)
  • 1 egg
  • Chili crisp and soy sauce, to taste
  • A splash of water or broth

Dipping Sauce (from @jamesyworld)

  • 3 tbsp tahini
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp chili crisp
  • 1/2 tbsp apple cider vinegar
  • Lots of sesame seeds

Directions

  • Layer all your veggies (napa cabbage, bok choy, enoki mushrooms, green onions) in a large microwave-safe bowl. Lay the thin-sliced pork or beef on top and crack in an egg.
  • Season with a spoonful of chili crisp and a splash of soy sauce, then add a little water or broth.
  • Cover and microwave until the meat is cooked through and the veggies are tender, about 8-10 minutes (check and stir partway).
  • Combine all the dipping sauce ingredients and stir well.
  • Serve the hot pot hot, with the sauce on the side.

  • 3 pitas (5-6 inches in diameter), halved
  • 1 lb ground chicken
  • 1/2 cup crumbled feta cheese
  • 1 small-medium red onion, grated
  • 4 garlic cloves, pressed
  • 1 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 1 tbsp olive oil
  • Zest from one lemon
  • 4 tbsp minced fresh mint
  • 2 tbsp minced fresh basil
  • 1 jalapeno (seeds removed), minced
  • To serve: tzatziki, lemon wedges, extra herbs

Directions

  • Make the meat filling: combine the feta, ground chicken, grated onion, pressed garlic, salt, pepper, olive oil, lemon zest, mint, basil, and jalapeno in a bowl and mix well with your hands or a spatula.
  • Divide the filling into 6 portions. Shape each into a semi-circle just a bit smaller than half a pita. Carefully open each pita half and press a flattened portion of meat inside. Close and gently press flat.
  • Heat a drizzle of olive oil in a skillet over medium heat. Fry the stuffed pitas, pressing down, until deeply golden and crisp on both sides and the chicken is cooked through, about 4-5 minutes per side (or grill them).
  • Cut into wedges and serve hot with tzatziki, lemon, and extra herbs.
